Today I’m sharing with you one of my absolute favorite healthy snack hacks- Buffalo Cauliflower!
I LOVE a good buffalo wing (or buffalo flavored anything really)… like embarrass my husband kinda love… but I live far from a worthy buffalo wing venue, not to mention they’re not the healthiest option around. Thanks to Pinterest I discovered these little delights a few years ago and they totally satisfy my wing cravings without all the mess and guilt 😉

The secret to making buffalo cauliflower is a super simple batter. The raw cauliflower florets are tossed in the batter then baked in the oven (note- these also come out pretty tasty with gluten free/ dairy free substitutions!). The cauliflower is tossed in buffalo wing sauce, then returned to the oven to bake until you’ve got cauliflower perfection! I use a pre-prepared buffalo wing sauce like Franks Buffalo Wing Sauce to save time, but if you’re feeling extra adventurous I have also made my own and it comes out superb (insert another Pinterest search here haha).
What I love most about this recipe is that it’s unexpected yet familiar, as well as quick and easy. This is a great way to do something a little different than the traditional vegetable plate for your game day spread. It is super easy to adjust the size of the recipe to meet your needs using a 1:1 ratio for all the ingredients.
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Ingredients
1 large head of cauliflower, stem and core removed and broken into florets
1 cup flour
1 cup milk
salt and pepper to taste
cooking spray
1 cup buffalo wing sauce or more to taste
1 tablespoon melted butter
Ranch or Blue Cheese dip
optional: carrot and celery sticks
Instructions
Preheat the oven to 450 degrees. Line a sheet pan with foil and coat with cooking spray.
In a large bowl, whisk together the flour with milk and salt and pepper to taste. Add the cauliflower florets to the flour mixture and toss to coat.
Place the cauliflower florets in a single layer on the baking sheet; season to taste with salt and pepper (sometimes I add a little garlic powder).
Bake for 20 minutes. While the cauliflower is baking, whisk together the buffalo wing sauce and melted butter.
Pour the buffalo sauce mixture over the cauliflower and toss to coat. Bake for an additional 10 minutes or until crispy and just starting to brown.
Serve immediately with ranch or blue cheese dip. Add carrots and celery to the serving plate if desired.
